Strozzapreti with squills sauce

  • garlic
  • parsley
  • olive oil
  • white wine
  • peeled tomatoes
  • salt and pepper

Clean the squills and chop them, sauté them in a pan with olive oil, onion, garlic and chopped parsley.
Add white wine and let it evaporate. Add chopped peeled tomatoes and let it boil for a couple of minutes.
Add salt and pepper. Cook the strozzapreti (handmade pasta without eggs) in a big pot of salted water.
Strain the pasta and add the sauce.
