Strozzapreti with squills sauce
Ingredients
- squills
- onion
- garlic
- parsley
- olive oil
- white wine
- peeled tomatoes
- salt and pepper

Method
Clean the squills and chop them, sauté them in a pan with olive oil, onion, garlic and chopped parsley.
Add white wine and let it evaporate. Add chopped peeled tomatoes and let it boil for a couple of minutes.
Add salt and pepper.
Cook the strozzapreti (handmade pasta without eggs) in a big pot of salted water.
Strain the pasta and add the sauce.
