Scampi with citrus


For 4 people:

  • 12 scampi (size depending on fresh fish available)

  • 600 ml orange juice

  • 300 ml lemon juice

  • Extra virgin olive oil

  • Salt, pepper (to taste)

  • 1 tablespoon of sugar

  • 2 pink grapefruits




Peel the scampi and soak for about 15 minutes in the juices, adding a spoon of sugar and salt and pepper to taste. Cook on a high heat for about 8/10 minutes. Remove the scampi and place on a serving dish, then reduce the juice in the pan to make a sauce. Pour the sauce over the scampi and garnish with carefully peeled grapefruit segments.
