The honey harvest, now reaching its 40th edition in 2026, has become a fixed appointment in the Cervia summer dedicated to food and wine.
The focus of interest is honey and its culture.
The initiative, which sees its climax in the honey extraction, is divided into several evenings that will make the historic centre of Cervia ‘sweet’: beekeepers, producers, herbalists, expert tasters, chefs and gourmets will take turns during these 3 events.
At the end of the honey extraction, the direct extraction of the honey, the tasting of the various types of honey will begin, concluding with entertainment and shows for all.

“Honey extraction,” explains Cesare Brusi, “becomes a huge public workshop, where everyone can watch, try their hand at it and taste the honey.
“In the past, right up until my grandfather’s time,” he continues, “only those in the trade were initiated into the rituals and magic of the world of bees. I remember my grandfather saying, whenever someone came to visit him, not to come too close – not because the bees were particularly dangerous, but because the secret had to remain within the family and be passed down from father to son. We’re trying to do exactly the opposite.”
This is precisely the philosophy behind Brusi’s work: to spread the culture of bees and honey as widely as possible.
