Squid risotto

Risotto con le seppie

Ingredients

for 4 persons:

  • 400 gr. Rice
  • 700 gr. Squid, not very large
  • 1 onion
  • ½ glass of white wine
  • Broth of fish
  • 1 spoon of chopped parsley
  • 3 spoons of olive oil
  • Salt and pepper

 

Method

Clean and wash the squids. Take the tentacles a part and cut the rest into stripes. Fry in a pot the choped onion with oil until brown and add than the rice, the tentacles and after a few minutes the squid and the white wine. Enclose now salt and pepper. When the wine is evaporated, add the soup and bring it to the boil. And the end dust the dish with parsley.
