Four days dedicated to white gold with meetings, cultural meetings, exhibitions, markets and shows.
The ancient tradition of salt storage is renewed, transported today as in the past, on a ‘burchiella’ pulled along the banks of the canal, from the salt pans to the warehouses.

Sapore di Sale - Salty Taste recalls the past of Cervia with street market stalls, exhibitions, shows, tasting sessions, and meetings.
Although nowadays salt is one of the most common ingredients on our table, in the past it used to be so rare and precious that people used to call it 'white gold' because it was fundamental for the preservation of food.
Therefore it is easy to imagine how Cervia was linked with this product and with its over 800 ha of saltpans.
The purpose of this event is to remember and celebrate Cervia's past and 'dedicate' a celebration to the precious salt, re-enacting the past traditions and proposing various themed attractions: exhibitions, historical re-enactment of the traditional salt delivery, music and performances.
New for 2025
Among this year's new features is the grand national preview of Conserva 2025 with a tribute to Umbrian “sciapo” bread and Norcia IGP ham, as well as a tasting of I Sabbioni wines (Saturday 6, 6.30 p.m.), a masterclass on Marsala with Francesco Falcone (Saturday 6, 9 p.m.) and the RE_SALT photography exhibition curated by LABA in Rimini at the Musa – Salt Museum, which will also be open at night during the festival.
Making this edition's programme even more interesting is the return of music, with an important concert by the Europa String Choir at the inauguration and other events in the days that follow.
Confirmed events
All the elements that made the initiative a success have been confirmed: show cooking, tastings and conferences on Italian salt pans inside the Salt Warehouses, the exhibition and market area with producers and artisans from all over Italy along the canal that runs alongside the warehouses, gastronomic offerings from local restaurants and food trucks under the iconic Torre San Michele in Piazza E. Maffei, guided tours of the Camillone salt pan and the convivial space of “Tramonto al sapore di sale” (Sunset with a taste of salt) at the Acervum inn.
On Saturday 6th in Piazzale dei Salinari, don't miss “Fuoco al Mito” (Fire to the Myth), to watch the spectacular traditional cooking of a wheel of Parmigiano Reggiano by the Parmigiano Reggiano Consortium.
The celebrations will kick off with an opening dinner on Tuesday 2 September at 7.30 pm at Acervum, featuring an exclusive menu based on Cervia's sweet salt.

Cervia Sapore di Sale is organised by Cooperdiem in collaboration with Atlantide, with the support of the Municipality of Cervia, the patronage of the Emilia-Romagna Region, the Province of Ravenna, the Po Delta Park, Slow Food Ravenna and AIS Romagna, and the participation of the Gruppo Culturale Civiltà Salinara, the Cervia Salt Museum, the Cervia Sea and Salt Ecomuseum, the Cervia Saltworks and the Parmigiano Reggiano Consortium.
